A true specialty of the <strong>peasant tradition of Salento<\/strong>, born when they were prepared with the few ingredients available at home to be eaten in the fields during the hard days of work. We offer them to you in <strong>a pizzaiola<\/strong> version: here is the recipe.  <\/p>\n\n\n\n<p class=\"wp-block-wd-paragraph wd-93079c30\"><strong>Ingredients:<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>350 g of 00 flour<\/li>\n\n\n\n<li>150 g Manitoba flour<\/li>\n\n\n\n<li>320 g of tomato puree<\/li>\n\n\n\n<li>1 onion<\/li>\n\n\n\n<li>120 g of <a href=\"https:\/\/frantoiocongedi.com\/en\/cat\/oil\/\">Extra Virgin Olive Oil Congedi<\/a><\/li>\n\n\n\n<li>6 g of brewer&#8217;s yeast<\/li>\n\n\n\n<li>20 g of salt<\/li>\n\n\n\n<li>Black olives &#8220;Congedi&#8221; q.b.<\/li>\n<\/ul>\n\n\n\n<p class=\"wp-block-paragraph\"><br><strong>Procedure:<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">In a bowl, mix the flours and add the tomato puree, Salento Congedi Extra Virgin Olive Oil and baking powder.\n\nKnead vigorously by hand or with the help of a planetary mixer. After a few minutes, add the pitted olives, finely sliced onion and salt. Continue kneading the dough until all the ingredients are perfectly blended.  \n\nCover the bowl with a clean tea towel and let rise in a warm place for more than 2 hours (the dough should double in volume).\n\nFlour your work surface, roll out the dough and divide it into pieces to form your pucce.\n\nLay the loaves on a floured baking sheet or lined with parchment paper.
