Le olive salentine vengono raccolte\u00a0<strong>direttamente dalla pianta<\/strong>\u00a0al\u00a0<strong>giusto grado di maturazione<\/strong>, chiamato\u00a0<strong>invaiatura<\/strong>. Il metodo di raccolta utilizzato dipende dalla pianta, pu\u00f2 essere in parte meccanico per scuotimento e in parte manuale, attraverso la brucatura a mano. Le olive della tradizione pugliese vengono poste in cassette areate e portate immediatamente in\u00a0<strong>frantoio<\/strong>\u00a0per essere trasformate. Questa fase \u00e8 molto importante per evitare l\u2019avvio di fermentazioni e ossidazioni. Le olive della terra pugliese subiscono un processo di\u00a0frangitura meccanica\u00a0che producono un\u2019azione di forte lacerazione e sminuzzamento di polpa, nocciolo e buccia.
