Olive Varieties: composed of a careful selection that the Congedi Family makes every year on the Coratina variety, a typical cultivar of southern Italy, in Apulia, harvested only in October.
Sensory Profile: intense extra virgin olive oil with a green color and very complex, it diversifies with hints of fresh hazelnut, arugula, radicchio and tomato leaf. It releases distinct bitter tones.
Pairings: vegetable seasoning, legumes, soups, bruschetta, barbecued meats.
