For four generations, specifically since 1917, the Congedi family has been producing premium extra-virgin olive oil in Salento.

Family tradition and detailed studies of our trees and soils have played a key role, as we have always and unceasingly sought to improve the product up to the production and subsequent preservation.

Through the use of the cold-pressed olive milling process, we have succeeded over the years in obtaining a high quality product, which is stored under controlled temperature, with the use of nitrogen, and in stainless steel tanks, to ensure high quality of our Extra Virgin Olive Oils.

Our strengths are numerous. First of all, one of the peculiarities of our oil company is the use, for the production ofextra virgin olive oil, of innovative, state-of-the-art techniques, which allow us to work in a completely sustainable way, reducing, indeed going to zero altogether, the impact on the environment. We have achieved this through different, wise arrangements from an eco-sustainable point of view, such as by reusing production waste as fuel, as fertilizer and as a supplement in animal feed, or by obtaining from the photovoltaic system the energy needed for the production plant. In addition, with modern facilities we have managed to reduce the water consumption required for extra virgin olive oil production while improving the quality of the final product. A combination of care for the environment and pursuit of high quality standards that is the perfect summary of all that is Congedi extra virgin olive oil.
