Olive variety: composed of the selection of the Ogliarola Salentina and Leccino varieties harvested in November.
Sensory Profile: the result is an extra virgin olive oil with medium fruitiness, which has distinct vegetal scents on the nose and is decisive and persistent on the palate. Medium-fruity with great complexity, it releases hints of artichoke and green olive.
Pairings: medium to full-bodied dishes such as first courses with vegetables, white meats, tuna and swordfish carpaccio, grilled fish or vegetables.
