Salento oil owes its good fortune, delicacy and goodness to the special blend of elements that characterize the Salento area.

Between the Adriatic Sea to the east and the Ionian Sea to the west, the Salento, south of Puglia, is a rugged, dry land, rich in olive groves and vineyards that rise among the rocks.

Thegold of Salento isextra virgin olive oil, the wealth and well-being of an area where thousands of olive trees have populated the land for centuries. The presence of the sea not far away, which the olive tree loves, encourages its growth and further enriches its taste, making the experience even more pleasant for the senses.

Different types of olives are harvested in the Salento area. These include the oglialora, leccina and cellina species. The latter, the Cellina di Nardò species is obtained from an olive tree that can be defined as high-yielding and of medium productivity, characterized by slow growth and fruits from which extra virgin olive oil is extracted only when they have reached full ripeness. Ogliarola, the second variety from which extra virgin olive oil is extracted in Salento, on the other hand, is fast-growing and of the same robustness as Cellina, producing abundant fruit that is perfectly elliptical and symmetrical in shape, resulting in an Apulian oil universally recognized for its goodness.
