To weigh oil more reliably, we have to rely on international standard measurements, which have as a reference point the density of water, which is equal to one, or 1 liter = 1 kg. In the International System of Units the specific gravity of olive oil is about 916 grams per cubic decimeter and can vary up to about 920 grams per cubic decimeter.

Such a variation in density is not an indication of low quality of the olive oil, but it can depend on many factors, such as, for example, olive maceration techniques, temperature and the same variety of the starting olives.
