Beat eggs-sugar vigorously by hand or with a whisk for about 5 minutes, until soft and well whipped. Add grated lemon peel to the mix and continue to whisk;

Drizzle with extra virgin olive oil and continue to whisk for another 2 minutes. Also add milk and sifted flour to the mixture by sprinkling;

Also add the sifted baking powder and mix the mixture thoroughly;

Grease a cake pan with oil and pour the mixture inside, leveling the surface well with a spatula:

Bake the cake in a preheated oven at 180° for about 40 to 45 minutes. Stick a wooden toothpick in the center to check the baking: if dry, it indicates that the cake is ready.

Let the oil cake cool, dusting it with powdered sugar (optional).
